Yes, they do, mostly with their colleagues, but they'd know what to expect too. The cooks in those restaurants most likely would struggle to get business cooking at a dai pai dong (roadside food stall) in Hong Kong or China. Most (not all) Chinese buffets are so full of home-brewed makeshift recipes, it's surreal. Harsh, I know. But you'd know what I mean if you've been to those places.

Undeniably, some dishes are greasier than others, as are some regional cuisines. The colder the region, the fattier the meat, and the oilier the dish.

By the way, since someone mentioned stir-fry: Stir-fry is a Cantonese and Fujian/Fukian cuisines' specialty. Its characteristics are light, fresh and crisp. If your friend cooks up a greasy stir-fry for you, beg him/her not to quit his/her day job. Just kidding! but really, when properly done, it's not supposed to be swimming in oil.
Every time they eat this! I don't know what is so good about eating the same rise everyday!
nah
No, Chinese buffets in America do not serve what would be considered a normal diet in China.
No. The food they eat is noticeably different. It's generally much healthier than what you get in typical restaurants here. Some Chinese restaurants I go to have 2 menues. One for plain Jane Americans and another for Chinese customers. The Chinese version is invariably better.
I work with many chinese people, and they do eat chinese food almost exclusively. However, they would never dream of eating at one of those chinese buffets (unless they were desperate), because the food has been sitting around for a while. Good chinese food should be prepared fresh, to order, and not left sitting around on hot plates or under warm lights. In addition, even though my chinese colleagues do eat freshly prepared chinese food in the US, they still think it is generally "Americanized" and not real chinese food for the most part.

I will say that, like you, most chinese food seems greasy to me, whether in a buffet, made to order at a restaurant, or prepared by one of my chinese friends. I think their food just uses a lot more oil in the stir-frying process than the food I normally eat, which is why I try to limit my consumption of chinese food (too much makes me ill).
I WORK RIGHT ABOVE A MONGOLIAN BUFFET PLACE WITH MY MOM. SHE EATS THERE AT LEAST TWICE A MONTH SHE LIKES IT SO MUCH, SHE ANSWERED A CALL TO DO A REALITY SHOW IN MONGOLIA BECAUSE SHE THOUGHT THE FOOD WOULD BE THE SAME, BUT WHEN SHE GOT OVER THERE AND THEY ATE STUFF LIKE SHEEPS EYES AND ENTRAILS I COULDNT HELP BUT LAUGH. THEY TOLD HER THAT THE FOOD WE EAT IS SO LOOSELY BASED OFF THEIR CUISINE THAT IS WOULD BE FOREIGN TO THEM. SO THEY MAINLY WOULD NOT EAT IT BECAUSE OF THE HIGH FAT AND CALORIE CONTENT.
The "chinese food" we eat here is way different than what "real" chinese food is. If people ate the chinese buffet food everyday anyway, than you would se a LOT more fat asians.
Yes, my bff is Chineese, they eat the same food!
having recently returned from a holiday in China (great country and friendly people) I do not recognise anything I see in our Chinese cookeries and I doubt the Chinese would eat the stuff
ha, be honest, no.
unless we are really hungry and nothing else sounds appetizing. the "american chinese" food mostly heavy on sauce and greasy, as you mentioned. also most of the time, very salty. is not that they can not cook good chinese food, the proprietor believes americans like "heavy flavor".
when i was a foreign student in miami, the group of chinese students determind if a newly opened chinese restaurant is worth going by reading the Miami Harold rating. if it has a good write up, say 4 or 5 stars, the chinese students won't eat there... coz it obviously an american chinese restaurant.
chinese not big on buffet style dining, it is not the authentic way of eating.
however, it is not true that all chinese buffet place is bad, my wife and i recently found one in our neighborhood that serves decent chinese dishes and all you can eat crab legs!
so we go there for the crab legs about once a month.
no kidding
