i think you should really learn more about China, i find a good website called chineseye.com, you can search more infos about Chinese.
And by my opinion, vietnamese thai and korean dishes are to hot, especially korean, it's too hot!
while Chinese food may a little salty and oil. it sames that the northern chinese like eat salty dishes, but the southern people like sweety food.
