seaweed or sometimes soy paper and yes you eat it. you should try things you already like. example if you know you like shrimp eat california rolls, if you like crab try crunch rolls, if you like salmon try a bagel roll. When your ordering you can also ask for a menu that explains what everything is.

Yes you're supposed to eat it. Just pick up the entire roll with chopsticks, dip in soy sauce, and eat.
There are some grocery stores (i.e. Trader Joe's) where you can buy rice crackers with a slightly spicy taste to them. These crackers are wrapped in nori, and they are called nori maki. If you're interested in trying them with take-home sushi sometime, they are very good.

The wrap is called nori -- it is seaweed and yes, it is edible.
Don't confuse this with what you what you find at the ocean.

In most cases the casing is seaweed, it is dried, the soften again to make the wrapping. Some sushi is also wrapped in rice. Going to a small Japanese sushi restaurant is the best place to sample.... by the way you are to eat the seaweed.. it really has no taste but it helps to keep the roll together.
