Having been over there a couple times, I'd hazard the guess that everyone uses chopsticks.

its called humour...use wikipedia or something similar for the statistics, the whole country of Japan, is not gonna come on here and give you the answer. The answer will already be out there on a website somewhere..maybe..
This question would compare to 'how many people in America use forks' wouldn't it? I'd say over 95 percent..

EVERYONE in Japan uses chopsticks at one point in time. Restaurants don't usually have forks...

I don't understand why you'd be asking this question. It's as if you don't know that chopsticks are the main eating utensil in most Asian countries.
After living in Japan for 6 months, I was irritated if I went to a non-Japanese restaurant that didn't have chopsticks. They are used all the time. 100% of Japanese use chopsticks.
Ask a Japanese on the streets of Tokyo!
