I am a former chef from Canada and love them all I had a great fish head curry at the Apollo in Singapore when I worked there, but the ultimate was the one I had in London at the Taj Mahal it is called "Phal" and has 12 different chilis in it regarded to be the hottest curry in the world, they made me sign a waiver first.
Korma, I love the nutty/creamy taste, to me curry is not about chilies and burning my mouth.
