Rougaille beef

2 cloves garlic, finely chopped
1 piece (1 inch) fresh ginger root, peeled and finely chopped
1 tablespoon olive oil
1/2 small onion, thinly sliced
1 tablespoon dried thyme, or leaves from 2 to 3 sprigs fresh thyme
1 can (14 1/2 ounces) diced tomatoes
1 can (15 ounces) tomato sauce
1 teaspoon salt
Pepper, to taste
1 1/2-2 pounds cooked beef, cut in bite-size pieces
1 tablespoon chopped parsley
1. In a small bowl, combine the garlic and ginger.

2. In a flameproof casserole over medium heat, heat the oil. Add the garlic mixture and cook, stirring frequently, for 1 to 2 minutes or until they are fragrant. Add onion and thyme; cook, stirring occasionally, for 5 minutes or until the onion just begins to color.

3. Add the diced tomatoes and cook, stirring, for 5 minutes or until most of the liquid has evaporated. Add tomato sauce, salt, and pepper, and continue cooking for 5 minutes more or until the sauce thickens.

4. Add the beef and cook, stirring often, for 3 minutes or until meat is heated through. Sprinkle with parsley. Serve hot with rice and beans

vegetarian rougaille
Ingredients
1-2 Eggs per person

1/2 Onion per person

(optional) Crushed garlic to taste

1/2 Teaspoon black mustard seed

1 Teaspoon dried thyme(1 Tblsp Fresh)

(optional) Chilli or cayenne pepper

1 Tin chopped tomatoes per person

(optional) Tomato Puree

Corriander

Oil (preferably ground nut)



Preparation
Add the eggs and a little water in a bowl and whisk.

To a hot shallow pan add a little oil and about 1/2 a ladle of the mixture to make thin pancakes. Flip and brown lightly on both sides

When cool slice into 1" or 25mm strips




Method
To a hot pan add a little oil

Add the black mustard seeds and wait to hear them popping

to a pan add the onions, garlic stir around then add the Thyme

When the onions are soft add the strips of egg pancake and tomato

Season with a little salt and pepper and if wished add chilli or cayenne here to taste

Turn down the heat and reduce on a medium heat you can add a little tomato puree to speed up this process although the it is better without using the puree.

Add a generous amount of corriander and stir in.

Serve with plain rice and vegetables and/or Bombay potatoes

Ingredients

* 5 Roma tomatoes
* 1 onion
* 3 small red chilis
* 3 blades of chive
* Coarse salt and peppercorns
* 2 tbsp. oil
* Optional: a pinch of grated combava zest


Method

1. Cut up the tomatoes (preferably seeded) in very small dice; it's easier to chop them, but the texture will not be as good.
2. Finely chop the onion and chives.
3. In a stone mortar, mash the red chilies (with the seeds if you want the rougail to be very hot) with the peppercorns and coarse salt.
4. Combine everything with the oil in a small container (add combava to taste).
