I have cooking-food problems?!
Answers: okay so i bought pork sausage which is breaskfast sausage but i dont know what to do with it! i am thinking of taking the skin of the sausage! any ideas of what i can do?
Pork Sausage with Potatoes and Zucchini
SERVES 3 – 4
The success of this effortless-to-put-together casserole . Everything goes into a heavy duty oven-to-table dish and cooks covered at a low temperature for 40-45 minutes, creating a delicious sauce. Vary the vegetables with carrot chunks or Brussels sprouts that have been cut in half.
1 pound good quality Italian sweet or spicy sausage
1 medium onion, thinly sliced
1 large red skin potato, cut into 1/4-inch thick slices
2 medium zucchini, trimmed and cut into 1/2-inch slices
Salt and pepper to taste
Preheat the oven to 325F.
Put the sausage in a round stovetop-to-oven-to-table baking dish at least 12 inches in diameter. (We usually use Le Creuset.) Or use a comparably sized chef’s or sauté pan. Pour in 1/2 cup of water and place over medium-high heat. Cover the pan and cook the sausage for 2 minutes on each side, or until it just turns gray. Move the sausage to the center of the pan; scatter the onions around the outside of the pan. Layer the potatoes over the onions and then put the zucchini over the potatoes. Sprinkle everything with salt and pepper to taste.
Bake covered 40 to 45 minutes or until the sausage is cooked and the vegetables are tender. Serve with some of the pan juices.
SAUSAGE AND PEPPERS
6-8 Italian sausage links, sliced
1 large can Hunts sauce
1 large green bell pepper
1 large onion, sliced
1/4 tsp garlic powder
1 tsp fresh or 1/2 tsp dried basil
1/2 tsp fresh or 1/4 tsp dried oregano
2-3 T olive oil
3-5 cloves garlic, whole
1/4 cayenne or jalapeno pepper, minced
1 bay leaf
1 small can mushrooms
1 T balsamic vinegar
Slice the sausage into 1 1/2 inch thick slices. Core and slice the pepper, and slice the onion lengthwise, 1/2 inch thick. Finely mince the hot pepper; you may substitute dried red pepper flakes or cayenne powder. Adjust amount according to heat desired.
Brown the sliced sausage in the olive oil. When the sausage is half done, add the whole cloves of garlic and allow to brown in oil, but if garlic browns too rapidly, remove to a cooler side of the pan. Crush the garlic cloves into the oil with the tines of a fork when they brown. Add the peppers, onions and cook until edges of onions begin to brown.
Deglaze the pan with the balsamic vinegar. Reduce heat and add the sauce, bay leaf, and remaining ingredients. Simmer over very low heat for 30 minutes. Last 5 minutes, stir in the can of mushrooms. Adjust seasonings, adding salt and pepper to taste.
Remove bay leaf and serve with portuguese pops, bulkie rolls, hoagie buns or any hearty roll with a substantial crust.
For a special occasion, layer on a bit of Parmesan or mozzarella cheese and place under the broiler 2-3 minutes before serving.

Chop it up, and put it in salad (no dressing). Cook it of course. It's healthy, and it tastes good!

Score the skin with a sharp knife, but don't cut all the way through.
Heat a little butter/oil in a pan, chuck the sausages in. Fry until they smell good, take out of pan and eat. What more is there to it?!! Happy feasting. ;O)
I personally like sausage with skin coz it's crispy.. but we're talking about a natural casing, not plastic.. ;Op
If you don't want to do a breakfast thing with it, take it out of the casing, brown it with some finely chopped onion, then add some thyme. When brown, take off heat and let it cool. Add some breadcrumbs, Parmesan cheese and put stuffing in Portabella mushroom caps. Bake at 350 degrees for about 15-20 minutes and serve.
Cut up some onion, bell pepper and garlic. Cook on medium high heat until onions are translucent then add sausage and cook until done. Add fried potatoes and a couple of eggs, don't forget to add salt and pepper to everything while cooking.
cook and serve with eggs. or cook and cut up and add to spaghetti if you have no hamburg meat.
