There are a number of recipes at Native Tech (http://nativetech.org/) Remember any butter or lard can easily be replaced by vegetable and nut oils and meat can be left out entirely (increase spice to your preferance) I find that "poultry seasoning" (sage, tyme, celery seed, marjoram, clove and black pepper) really enhance many bean dishes and give the illusion of "pork/poultry" flavor sufficently to make up for the elimination of meat in the dish. When making dishes that are "Native American" remember to use nuts, dried fruits and grains - the basic staples of most Native peoples. Good Luck!

Has recipes you might be able to adapt to vegan.. A lot of these recipes are breads and soups..plenty of vegetable recipes..

Try fry bread, it's traditional and eaten with a lot of Native American meals. Also, corn pudding. I remember that as a kid.

In addition to what has already been given to you (very good ones they are, too) it is important to note that tomatoes and corn and potatoes and many berries originated in the Americas.

And, as a trivia piece: The potato chip was invented by a hotel chef who just happened to be a full-blood American Indian. So technically you can add it to your list.
