They are not unlike polenta, which is a substitute for bread (in Italy but also in other parts of Europe) made from either white or yellow corn meal. It is made by boiling water and stirring in gradually the corn meal until the cream reaches a certain thickness. Than you let it simmer for at least half an hour, add salt and when it is ready you pour it on a flat surface. Instant grits only need to cook for a few minutes.
If you let them (both grits and polenta) cool, they will turn rather fest, so they can be sliced and grilled or fryed.

I make a popular casserole that uses cooked grits, crumbled bacon, a can of rotel a bag of cheddar cheese, bake in 350 oven for about 30 minutes.

I am Canadian and had them for the first time when we went way down south a few years back. I had always wanted to try them and I have to say that they ranked right up there with liver and offals. I would never eat them again.

Grits are delicious. If you prepare them you always need to add butter to flavor them and my favorite is crumbled up bacon and a sunny side up egg. Delicious, but you can also treat like polenta. Add cheese(your favorite kind or definitely a cheddar cheese to bring the flavor out. ), maple syrup is also delicious, experiment, warm and creamy, they are lovely. But if you have some over from the night before, my mother used to cut them in chunks, not very large, roll them in flour, and fry them until crispy and lightly browned. We added maple syrup and then you had crispy on the outside and soft on the inside. Yep we love grits!!!
