I splurge sometimes and get a can of black olives and sour cream. how many you making it for? between the price of the meat, can of olives, lettuce,sour cream and a tomato. it comes out to about $2.50 per person for a family of 6.

Fast food is your best bet, other than that beef tacos.

Very easy: you can buy cans of either pinto or black beans for less than $1. Or you can buy dried beans in bulk & cook them yourself. Also very inexpensive. You can buy a pack of tortillas or eat rice. Buy family packs of ground beef or chicken pieces. You could buy these things at Sam's Club (or BJ's or Costco's...). A little onion, garlic & seasonings --- you could have an easy Mex meal at home on a budget.

Make your own ground beef tacos, rice and black beans. Make a taco salad tomorrow night with the leftovers. (Or just freeze the remaining cooked beef filling).

Cheese quesadillas are another easy and inexpensive choice. Serve with sour cream and salsa.
