But queso blanco is one of the best cheeses out there for most mexican dishes. Its used in alot of things. You can buy it from any store that has a big assortment of cheeses.

Its a non melty cheese, that means it doesnt have fat, when you bite it you feel a "fresh" cheese not like dry cheese. Its similar to tofu.
