What makes raita sauce yellow in colour?!


Question: Agree with Desi Chef . Whoever has given you the recipe must be nuts ! Turmeric is NEVER added to Raita.
The only other way Raita can turn a bit yellow is if you are adding BOONDI ( a type of fried dumpling ) or if you are using grated carrots.
The most delicious raita is made with grated cucumber with a pinch of lemon and salt added before you finally stir it into the beaten yoghurt. If you can handle green chillies, add one finely sliced.

Haldi (TURMERIC in English)!

It's usually added after the Onions with Cumin etc is cooked.

After turmeric, all other spices, salt and tomato is added before adding any solids (potato etc) and lastly water.

Raitas should NEVER be yellow! No one eats yellow raita in India!

It's turmeric (haldi) but should not be added, you are eating raw turmeric which is not good. Turmeric should always be cooked, then it aids in digestion.

It could also be curry powder (which contains turmeric also), but it should not be eaten raw.

Raita isn't yellow at all. There's no varieties to it, and the recipe has only yogurt, cucumber, mint, salt and a pinch of cumin. Nothing to make it yellow.

My raita is always white in colour.

If you want it yellow add turmeric, strange to me though.
