Does anyone have a nice homemade HUMMUS recipe with no additives?!
Answers: I'd like to use chickpeas and/or sesame paste (not sure if you use one or other or both), lemons & maybe limes. What else does into a homemade hummus recipe. Thanks
Original recipe:
1/4 cup chicken or vegetable stock
14 oz. can chickpeas, drained or cooked homemade
3 cloves garlic
2 Tbs. lemon juice
3 Tbs. tahini (sesame paste)
blend until smooth
or
Fat-Free version:
splash of fat-free broth
1 drained 14 oz can of chickpeas or cooked homemade
2 Tbs. lemon juice
2 cloves garlic
sprinkle of paprika
salt and pepper to taste
blend until smooth
both are very yummy.....

Put 175 g (6 oz/1 cup) cooked chickpeas, 2 tablespoons lemon juice, 3 tablespoons tahini, 1 teaspoon ground cumin, 1 garlic clove and a pinch of cayenne pepper into a blender or food processor. Blend to a puree, adding a little water if necessary to make it smooth. Season with salt and pepper, then fold through 2 tablespoons of olive oil. Makes about 500 ml (17 fl oz/2 cups).
I've made this often, hope you're pleased with the result.
hey, i tried this recipe and its the best hummous ever! no additives or nothin'. No cooking either! its like a 5 minute job.

2 cans chickpeas
3 cloves garlic
peanut butter
juice of 1 lemon
zest of same lemon
mint
salt
pepper
olive oil
water
whiz it all in the processor until its the consistency you like. Stop after a couple of seconds and taste. For the peanut butter, its an emulsifier mostly, so only add enough so you don't taste it. Change any or all of the above amounts to suit your own taste.
Made some on the fly 2 nights ago:
1 can cooked chickpeas (garbanzo beans) - drained SAVE the water
2 table spoon of fresh lemon juice
1 teaspoon tahini
pinch of oregano
half teaspoon cumin powder
couple table spoons of olive oil.
(garlic optional)
Put all in the blender - turn to mid low and start to blend - add a bit of the water, tap the sides of the blender to knock the mash into the blades. Turn up high & add liquid until desired consistency.
