I whip up a potato dish i use at family get togethers.

Take frozen hash browns or home fries.
Place in an oven safe dish.

Mix up 2 cans of mushroom soup with 16 oz sour cream and some chopped chives. I use dried chives. You can also add sweet onion cut up in tiny pieces...
Pour mix over the potatoes. Make sure it is completely covered with mixture.
Bake in oven at 375 for 25-30 minutes.
Sprinkle 2 cups of cheese over the potato dish and cook for a few more minutes...til melted.

Serve warm!
Yum.

German potatoe salad (the recipe normally calls for regular potatoes but I think the redskin are much better for this recipe)

4-5 medium redskin potatoes, boiled in skins
3 bacon slices
1/4 cup onion, chopped
1 tablespoon unbleached flour
2 teaspoons sugar
3/4 teaspoon salt
1/4 teaspoon celery seeds
1/4 teaspoon pepper
3/8 cup water
2 1/2 tablespoon vinegar

Preparation:

Cook potatoes in enough water to cover until done, approximately 30 to 40 minutes (cooking time is for regular idaho potatoes, redskins will cook faster) . Allow to cool. Cut into bite size chunks. Set aside.

Sauté bacon slowly in a frying pan, and drain on paper towels. Sauté onion in bacon fat until golden brown. Blend in flour, sugar, salt, celery seeds and pepper. Cook over low heat, stirring until smooth and bubbly. Remove from heat.

Stir in water and vinegar. Heat to boiling, stirring constantly. Boil for 1 minute. Carefully stir in the potatoes and crumbled bacon bits. Remove from heat. Cover and let stand until ready to serve.

Warm Potato Salad

3 pounds redskinned potatoes, quartered
6 bacon slices, chopped
3 celery stalks, diced
2 jalapeno chilies, minced
6 green onions, chopped
1 teaspoon ground cumin
1 tablespoon brown sugar
1/4 cup cider vinegar
1/2 cup chicken or vegetable stock
Pinch of cayenne pepper
1/4 cup chopped fresh cilantro

Steam potatoes until just tender. Meanwhile, cook bacon in large skillet until crisp. Using slotted spoon, transfer bacon to paper towels and drain. Pour off all but 2 tablespoons drippings from skillet. Add celery to skillet and saute until softened. Add jalapeno, green onions, cumin and sugar and stir 1 minute. Add vinegar, broth and cayenne pepper. Bring to boil.
Combine warm potatoes and bacon in large bowl. Add hot dressing and toss to coat. Season to taste with salt and pepper. Add cilantro and toss again. Serve warm.

2 tablespoons French dressing
1/2 cup cream

Cook potatoes, leave whole or slice thinkly, drain.
Combine remaining ingredients in skillet, add potatoes and heat gently for 5 minutes.

easy recipe garlic and thyme whipped potato ....just mince the garlic and cook it with butter and milk then chop some fresh thyme and add it to the milk mixture then add it to the whipped potato and you are a winner hope this helps you!!

Well, I was going to say scalloped.
If you put enough onions in it that would make it different.

TWICE BAKED POTATOES WITH CABBAGE AND
ONION

4 large baking potatoes
3 cups finely shredded cabbage
1/2 cup chopped onion
1 tablespoon olive oil
3 cloves garlic
3 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup sour cream
Chopped fresh dill or chives
Chopped fresh parsley
Crumbled bacon (optional)

Scrub potatoes and prick with a fork. Bake in a 400-425°F oven for 40 to 60 minutes or until nearly done. When potatoes are cool enough to handle, cut a neat oblong "lid" in the top of each one and scoop out the pulp from inside, leaving a thin shell of about 1/3 inch. Reserve pulp in bowl, saving lid separately.
In small saucepan saute cabbage and chopped onion in olive oil and butter. When onion is lightly colored on edges, turn off heat and add garlic, herbs and seasonings.

Mash the potato with the sour cream. Stir into the cabbage and onion mixture. Spoon pulp back into potato shells.

You can top this with shredded cheese for a variation.

Place potatoes in a shallow baking pan. Bake in a 425°F oven for 15 minutes. Place saved lid lightly on top and serve.


POTATOES WITH SAGE AND PARMESAN CHEESE

4 large potatoes, well scrubbed
2 quarts boiling salted water
1/3 cup butter
1 1/2 teaspoons dried sage leaves
3/4 cup freshly grated Parmesan cheese
1/2 teaspoon cracked black pepper
salt, to taste (if needed)


Wash and peel potatoes. Cut into 6 to 8 lenthwise wedges.
Meanwhile, bring the salted water to a boil. Drop in potatoes and boil for 5 minutes.

Remove potatoes (they will still be firm). Drain.

In a skillet, melt butter over low heat and heat until butter has nearly browned. Stir in crumbled sage and potatoes. Continue to cook over medium heat for 10-15 minutes, stirring occasionally until all the butter has been absorbed and the potatoes are tender.

Sprinkle with Parmesan cheese and black pepper. Taste and adjust seasoning (adding salt, if needed). Stir to mix and serve immediately.

This is a fantastic recipe and makes a large 9 x 13 pan very full. It is called Cheesy Hash Brown Bake
2# bag of frozen hash browns either shredded or chunk
1 can of cream of chicken soup
1 cup of sour cream
1 can of cheddar cheese soup
1/2 cup or more of onion chopped
1 stick of butter
1 tsp. salt
1/4 tsp. pepper
1 cup shredded cheddar cheese
Thaw the hash browns and mix with all the ingredients. Put in a greased 9 x 13 pan. Take an additional 1/2 cup of butter and add 1 cup of shredded cheddar cheese and 2 cups of crushed corn flakes. Put on the top of the mixed hash browns. Bake in a 350 degree of for 1 to 1 1/2 hours till done.
My kids all moved out of state and when I went to visit I told them I would make them their favorite meal and this is what was their favorite. It is really cheese and really moist. Hope you enjoy.

POTATO SKINS WITH CHEESE AND BACON

8 baking potatoes
2 lbs. bacon
1 lb. Cheddar cheese (shredded)

Bake potatoes until done. Cut in half and clean out majority of potato leaving skin and about 1/8 inch of potato. Fry bacon until crisp then crumble; set aside. Fry potato skins in bacon grease until crisp (turn them one to two times). Drain skins on paper towels. Fill skins with cheese. Top with bacon. These toppings can be varied - olives, tomatoes, salsa, chicken, ground beef, various cheeses. Broil until cheese is melted. Top with sour cream and chives.

Potatoes Baked with Tomato and Onion Recipe

RECIPE INGREDIENTS

2 lb potatoes, sliced 1/4 in thick
2 onions, thinly sliced
1 lb ripe tomatoes, seeded and chopped
1/2 cup olive oil
Salt
2 tablespoons dried oregano
1/2 cup freshly grated Pecorino cheese
1 cup water

RECIPE METHOD

Preheat the oven to 350 degrees F. In a large bowl, combine the potatoes, onions and tomatoes, sprinkle with the olive oil, salt, oregano and Pecorino mix. Add the water and combine well.

Transfer the mixture to an oiled baking dish. Bake in the oven for 1 hour. Serve hot.

I make potatoes florentine all the time.

Boil and mash about 6 med potatoes.

Thaw and SQUEEZE tightly a box of frozen chopped spinach.

Add about 1/2 cup shredded cheddar, 1/2 cup of sour cream, salt and pepper to the potatoes, then add spinach and stir together.

Put in a buttered 9x9 square baking dish...top with more shredded cheese, dot with a little butter, and bake at 350 degrees for about 1/2 hour.

You can add some chopped green onions to this if you like, but I leave it out.

Take your potatoe, slice them about 1/4 inch thick. Cut up a onion. Get olive oil, not to much, cook the onions, slowly, then add salt andpepper, put your potatoe, in skillet, brown, then then add water, cook over low heat until tender. You may cover with cheese or service it like it is. People love it. hope this helps.
