Beef Sukiyaki

Get sukiyaki sauce from Asian Supermarket, not sure what is the price but in Singapore it costs S$5.00 or US$4.00

In a microwaveable pot or a cooking pot, arrange it with thinly sliced beef, sliced onions, toufu, clear/string bean noodle, golden mushrooms.

Beat an egg and put it over the ingredients. Add sukiyaki sauce, some soya sauce and black pepper. Do not mix the egg into the sukiyaki sauce.

Microwave it for 5 mins or let it cook over medium fire for 3 mins. Serve it with rice.

Beef or Chicken Japanese Curry

Get S&B Brand of Japanese Curry that cost S$4.50 or US$3.70

Chicken or Beef, minced garlic, sliced cabbage, carrots, onions and US potatoes.

Marinate the chicken and beef with some salt and tumeric powder and leave it for at least one hour.

Stir fry garlic and do a quick fry on the chicken and beef. Scoop out the meat.

In a pot, stir fry onions and pour water and put in carrots and potatoes. Cook with medium heat

After 25 mins of boiling, add cabbage, Japanese curry and chicken or beef and let it cook for another 5 mins.

Serve with rice

BROILED TUNA STEAKS WITH JAPANESE
SAUCE

4 yellow fin tuna steaks, 1-inch thick
Sesame oil
1 rounded tsp. cornstarch
1/3 c. rice vinegar
1/3 c. mirin
1/3 c. soy sauce
1 lb. spinach leaves, rinsed, stemmed and dried
1 (6 oz.) box Saffron Rice, cooked per box directions
3 tbsp. minced crystallized ginger

Start coals, start rice. Make sauce: dissolve cornstarch in vinegar. Combine with mirin and soy sauce and simmer until mixture is a clear dark brown and thickened. Remove from heat but keep warm. Stem spinach leaves for 2 minutes.
Grill fish rubbed with sesame oil over hot coals 5-7 minutes per side

Assemble: Arrange a bed of spinach on each plate, place a tuna steak on top of spinach. Spoon a ring of yellow rice around plate. Spoon sauce over tuna and sprinkle with crystallized minced ginger.

JAPANESE-STYLE FRIED CHICKEN

1 lb. chicken thighs
2 tbsp. soy sauce
2 tbsp. Japanese sake
2 tsp. fresh ginger juice, grate and squeeze out juice
5 tbsp. cornstarch
Vegetable oil for deep frying

Using a fork, prick holes all over the chicken. Cut into 2-inch pieces.
Mix soy sauce, Japanese sake and fresh ginger juice. Steep chicken in the soy sauce mixture for 20 minutes, stirring occasionally. Heat vegetable oil to 330 to 340 degrees and fry slowly and well.

BEEF STEAK, JAPANESE STYLE

28 oz. beef sirloin
Salt and pepper
6 tbsp. sake
5 tbsp. soy sauce
Vegetables (lettuce, watercress)
1 lemon
1 c. grated Japanese radish

Cut sirloin in thick slices and pound lightly. Sprinkle with salt and pepper. Grease bottom and sides of frying pan lightly with shortening. Brown beef on both sides and reduce heat to moderate. Sprinkle sake over beef, remove alcohol by touching with a match, then add soy sauce and cook until there is no liquid left. Cut beef into bite sizes and place on a dish. Garnish with vegetables. Serve with grated radish and a slice of lemon, or optionally grated ginger and prepared mustard.
