All you need is nori, sushi rice (sweet rice) wasabi, vinegar (I prefer the gluten), some veggies, if you want fish, go to the nearest and best fish market you trust and get just a little. If you're worried about the parasites in fish, get smoked salmon or the fake crab legs.

All you need is rice, seaweed, and raw fish.
As mentioned, the basics are easy - nori, rice vinegar, wasabi, soy, etc.
The key thing is fresh fish, but you can get that (I live in New England too - I even can get the really fresh frozen tuna at the supermarket - just make sure it's bright pink/red).
Actually what you probably need to work on, if you want to do maki rolls, is short-grained rice, which is "sticky rice". Some sell it now in a microwave version, but if not, get it and cook it, but it's differnet than long-grain (not so sticky if long-grain).
