Fried foods are not good for you no matter how hot the oil is when you fry it. A little olive oil or canola oil is good for you in small amounts. Deep fried foods are high in saturated fats and you should stick with broiled, baked, grilled or sauteed foods in olive oil.

Deep fried is not necessarily unhealthy if done correctly. The oil and food must be at the correct temperature. An example of an unhealthy deep fried food is taking anything out of the freezer and right into the deep fryer. The oil temperature is lowered and the food needs to sit in the fryer longer and absorbs more oil.
Always fry foods at room temperature.

Did you know that McDonalds fries has 50% more calories than Burger King because McDonalds fries go right from the freezer into the fryer whereas Burger King thaws them first.

Also, if you saute foods, you typically are eating the oil as part of the finished dish/sauce whereas deep fried foods are removed from the oil so the only additional fat is in the oil that has been absorbed (so my initial comments are very important).

In summary, anything that is grilled, boiled or steamed is going to have less calories than if you deep fried the same food. That applies to any food (to address your initial question), But, you don't have to remove deep frying from your cooking repertoire if you are smart about it.

But another rule of thumb for frying is:

If you have that oil hot and ready for what you are frying then the oil is not absorbed in the food, instead it fries the outside leaving the inside oil free.

Always check to see if the oil is hot enough by taking a wooden spoon and sticking the long side down in the oil, if it bubbles it is ready, if it does not let the oil get hotter.

Tempura is as good as it gets. Light and delicious. I lived in Japan, went to bars 4 or 5 nights a week with my Japanese friends, ate tempura there until I could hold no more, and came back 35 pounds lighter. Not good for you? Tastes good, feels good. I don't care.

sounds strange but try it, dip fresh broccoli and cauliflower in egg wash then "bread" with only freshly grated parmesan then deep fry lightly-its awesome
