Ideas for 3-course-menue for family event?!


Question: Hi,

I asked this in "Cooking and Recipes" already, but I want some more varied answers. I've got a big family event coming up and and need to cook for it. Typically we have roasted turkey or duck with potatoes and vegatables as main course on these occasions but it is getting pretty boring. I was wondering whether anybody had some other ideas?

Limiting the choices are the following:
- no wine or alcohol in the recipe
- no pork
- fish is ok, but would need an alternative for the fish-haters
- no gelatine
- no sweet-sour or fruity-spicy
- nothing pricy (need to stay under 60 USD/50 EUR for everything)
- low calories

All else is free game. I would be really grateful for any suggetions. I want to do something a bit extraordinary for this event, so I'm especially open to Asian recipes. (We are Germans btw, so I would like to avoid German and Mediteranean foods.) I also like to cook from scratch so that I know precisily what is in the food.

Asian:

Do a Hot & Sour soup and/or an Asian sesame ginger salad.
A chicken stir fry with either noodles or rice. Maybe a veg dish (schezuan long green beans or eggplant). Dessert could be just some simple fruit and ice cream. Add a few almond cookies and some jasmine tea. To accompany your German heritage: some Tsingtao beer.

Falafels/Hummus or Kefta/Kabobs or dolmas as apps
Tabbouleh or Fattoush salad.
Lamb or Chicken Tajine with roasted veggies and couscous
Morroc Mint Tea and assorted Baklava for dessert

Samosas/Pakoras for Apps
Palak Paneer (Spinach with cheese) or baingan bhartha (roasted Indian eggplant), Chicken Curry & Jeera Pulao (cumin scented rice), naans & raita. Chai or Indian beer. Almond or Pistachio Ice cream with fruit.

Go for some Indian food. Vegetarian, can be made low fat, and very tasty. I've given a couple of not-very-spicy recipes.

Lentil Dahl (soup)
200 g red lentils
1/4 tsp turmeric powder
1 tsp cumin
2 potatoes, peeled and diced
4 tomatoes, skinned and chopped
900 ml water (4 cups)
1 tsp coriander
4 cloves garlic, crushed
1 onion, diced
25 g margarine
1 tsp garam masala

Cook lentils, turmeric, cumin, potatoes and tomatoes in the water for 15 minutes- until potatoes are cooked.
Add coriander. Saute chopped onion and garlic in margarine until golden. Add garam masala and saute a further 2 minutes. Add to lentils and mix well. Serve with rice.

Chana Masala (curry chickpeas)
2 15.5 ounce cans garbanzo beans (chickpeas)
1 tsp cumin seed
1 c onions
2 tsp ground coriander
1/8 tsp ground tumeric
1 tsp garam masala
1/2 tsp salt (optional)
2 tsp garlic, minced
2 tsp ginger, minced
1 cup water
3 tbsp tomato paste
1 15.5 ounce can tomato puree
1 tbsp lemon juice
1/4 tsp red chili powder (optional)

Instructions:
Rinse garbanzo beans in cold water and drain. In a saucepan, "fry" cumin seeds. Add onions to cumin, and fry until they turn brown (translucent). Lower heat and add coriander, tumeric, garam masala, salt, ginger, and garlic.
Mix and cook for 30 seconds, stirring all the time. Add 1 cup water, tomato paste, and pureed tomatoes. Mix and bring to a boil. Add garbanzo beans, lemon juice, and red chili powder. Mix well, cover and cook over medium heat for 15 minutes, or until garbanzo beans are soft. Stir occasionally. If the mixture gets too dry, add a little water. Serve garnished with green chilies, onions, tomatoes or cilantro. I found this recipe in the book "Indian Recipes for a Healthy Heart."

For the third course meal, I'd suggest buying a pre-mixed biryani spice packet and making a shrimp or chicken biryani according to the instructions on the back.

Also, garam masala is just a kind of curry powder - if you can't find anything labeled garam masala, just use regular curry powder.

raita(salad in yogurt) and lassi(sweet/salt indian almond flavoured milk)
