CURRIED CHICKEN (MURGH MASALA)

8 pieces chicken, skinless
2 onions
4 cloves garlic
1/2 tsp. ginger
1/2 c. yogurt
1 tsp. coriander powder
2 tbsp. curry powder
1 tsp. cumin powder
2 finely cut tomatoes
Salt and green pepper to taste
Parsley to garnish

Puree onions, garlic and ginger together. In a large skillet add 1 spoon oil and brown the pureed onion paste. Stir for 8 to 10 minutes on medium fire. Now add the chicken and cover it with tomatoes, yogurt, salt, pepper and the spices. Cover the skillet and let it simmer for 15 minutes. Stir the chicken for all the spices to blend in. Cover and let it simmer on low fire for further 10 minutes. Now serve hot and garnish with parsley (fresh). Serve with white rice and garden salad.
Serves 6-8.

CHICKEN DOPIAZA*

1 lb chicken breasts, cubed
6 small onions, halved
3 bay leaves
8 green cardamom pods
4 cloves
3 dried red chilies
8 black peppercorns
3 garlic cloves, crushed
1 inch ginger, chopped
2 onions, chopped
1 tsp. coriander powder
1 tsp. cumin powder
1/2 tsp. turmeric powder
1 tsp. chili powder
1/2 tsp. salt
2 large tomatoes, chopped
1/2 c. water
3 tbsp. vegetable oil or ghee

Heat 2 tablespoons oil and fry the halved onions until tender and translucent. Remove and keep aside. Add the remaining oil and saute the bay leaves, cardamom, cloves, chilies and peppercorns. When they crackle, add the chopped onions this time, together with the garlic and ginger. Saute for 3 minutes. Add the ground spices and salt and cook for 3 minutes. Add the water and tomatoes and simmer 5 minutes until sauce starts to thicken. Add the chicken pieces and continue to cook for 12-15 minutes. Add the reserved small halved onions and then cover and cook for 8-10 minutes more or until chicken has cooked through.

*Dopiaza means "double onion"

Btw, any recipe that involves curry powder isn't even true indian cooking.

    Curry is much misunderstood concept about Indian food. This has come about mainly from UK where Indians, Bangladeshis & Pakistanis opened restaurants and popularised Indian food.

    India is a huge country copnsisting of 30 States and over 16 offical languages. We have Hindus, Muslims, Sikhs and Christians. The food habits as well as cusisine varies from one part of the country to the other. As such we cannot say that there A particular dish which can be called Pan-Indian. With the popularity of North India style of Food all over India, we can say that many vegetable dishes like Aloo-Mutter ( Potatoes& Green Peas in a curry sauce)and chicken dishes like Tandoori Chicken( Oven Roasted Marinated chicken with bones) are available and relished all over India.

    80% of Indians are Hindus and 80% of Hindus are vegetarians.

    Dal (lentils) and rice or dal and roti would be a staple in a indian diet,,,after that depending on a person ot would be chic tarry(the sauce in a curry in india is called turry) of veg bhaji

    It isn't curry.

    It's called shaak.

    Curry is just the name on the sauce. Other people just think "Oh, indians eat curry, nuff said"

    They're just dense.

    Basically, they have meals with flat bread (chapatti/roti), shaak (a curry based dish with meat, vegetables or fish) and boiled rice.

    For dessert they would usually have a spiced ice cream called kulfi.

    The people up there who said curry are just single minded.
