Mochi - Filipino Mochi recipe??!


Question: My lola use to make this all the time and she never wrote anything down. My cousin makes it but its not the same.
I have the box of mochi flour and would like a recipe.

Ingredients:

5 cups mochiko (sweet rice flour)
3 cups white sugar
1-1/2 cups coconut milk
1 small can condensed milk
1 bottle macapuno (optional)


How to make mochi:

Preheat oven to 300 deg F. Grease and foil line a 9 x l3-Inch pan. In a mixing bowl, mix mochiko and sugar.

Add coconut milk and condensed milk until smooth. Pour mixture into prepared pan. Bake 30 minutes. Pour macapuno on top and bake again. Cool and slice.

It is called BIBINGKA. You can find many recipes doing a Google search, from authentic to modern fusions.
