Lebanese food is by far my absolute favorite. I love cooking it for friends and family and even co-workers. It is something that normally they wouldnt make, for many don't know how.

Give me a plate of dolmas over lasagne anyday (but I like Italian too!)

South Indian food, nice and spicy, particularly South Indian curry is my vote.

I agree, Italian is by far my favorite, but it gets plenty of attention world-wide. I recently tried Indian food with the encouragement of a fried (who's Indian), and it was great! I just loved all the spicy curries, and eating with my hands was LOTS of fun!

I don't think Thai cuisine is underrated at all- look how many things are made with a Thai influence today, from pizza to frozen dinners to canned soups: Thai food (or at least its influence) is everywhere. I think Lebanese is probably underrated in the US. People think of it as "Arabic food", when Lebanese food is its own thing for sure. Also, people don't know of too many Lebanese dishes outside of hummus, and there is so much good stuff! I think Ethiopian cuisine is quite underappreciated. It has many tasty dishes, many of them resembling thick stews that are eaten with a spongy bread known as 'injeera'. People tend to think of Ethiopians as having no food, so they don't make an effort to try what is out there.

i love thai, plus it's healthier i think than italian (too much starch in their recipes) lots of vegies in thai :) getting hungry now...

Lebanese or Thai are definitely not underrated! My favorite is probably Indian or Thai but there are lots of underrated cuisines:

Burmese (Myanmar), Cambodian, Laotian, Nepali, Tibetan, Bhutanese

Alot of African cuisine: Sudanese, Tunisian, Namibian....

Bolivian, Chilean, Belize, Guam...

Papa New Guinea, Tahiti, Fiji, Javanese...

Classic American Soul Food. It often gets a bad rap, for being high in fat and sodium. It doesn't have to be prepared that way. It is a true mixture of many types of cuisine.
