Can I use jaggery instead of palm sugar in a pad thai?!


Question: At my nearest ethnic grocery market, I asked if they had palm sugar, only to be shown a thick hard yellowish brick called jaggery (gur) that he claimed was a similar substitute. He said to grate the substance into my sauce, and I wanted to know if he was correct...anyone know?

There are 2 types of Indian jaggery: sugar cane jaggery and palm jaggery.

Palm jaggery would work as a better substitute for palm sugar.

That is a tough one. Most jaggery outside of india isn't made from palm sap, but if what he has is, it will be a very similar substitute. If it is made from sugar cane, which it most likely is, it will be less like true palm sugar, but it still may be pretty similar. I, personally, would use it if getting real palm sugar is any trouble.
