I am a former chef and worked in Sotuheast Asia, and still make alot of Thai and Vietnamese dishes, there basically the same, it my be less salty and the thai/vietnamese ones are made with anchovies, I have been told the filipino ones have a bit of dried sardine in them, and tend to be a bit darker, not a problem.

I like the Filipino one for braised fish/seafood dishes, like ones I use the filipino soya sauce and banana ketchup with (sili), it is a taste matter, and can be solve with just adding less or adding it at the end, so as not concentrate the flavour.

You can interchange them in recipes. The taste is only slightly different. I prefer Vietnamese fish sauce.

Thai fish sauce --good brand are Pramuk (squid) and tipparod.

I am Thai. I am now using Tipparod. However, I love Pramuk--they smell great :)

They are interchangeable.

They are basically the same thing. Whichever one you find jus use it. It mostly is based on preference. I am southeast asian and I change my fish sauce all the time.
