Question: My aunt is "sick and tired of cooking the same old crap" and wants some dinner ideas. The only issue is that the dish must be kosher.

Egg & Onion Matzoh Brei
One piece of matzoh for each person
2 Tablespoons chopped onion for each piece
salt & pepper to taste
1 egg for each piece
butter for pan
break up each piece of matzoh & lightly cover with water saute onions in small amount of butter squeeze water out of matzoh,mix with egg,and onions,season to taste-and pour in pan and cook until brown,turn over cook other side. Bon Apetit

Artichokes Italian-Style
This piquant vegetable recipe is said to have originated in the ghettos of Rome. It's a prime example of Jewish ingenuity in creating kosher dishes with local ingredients. Serve hot as an appetizer or side dish.
4 SERVINGS

2 tablespoons olive oil
2 (14-ounce) cans artichoke hearts, drained and patted dry
3 garlic cloves, minced
3 tablespoons fresh lemon juice
2 tablespoons grated Parmesan cheese
1. In a medium skillet, heat olive oil over high heat. Add artichokes and cook 2 minutes to heat through.
2. Reduce heat to low. Stir in garlic and lemon juice. Cook 5 minutes longer. Remove from heat and add Parmesan cheese. Stir gently to mix.

3. Transfer to an oiled broiling pan. Finish off under preheated broiler to brown at edges, 2 minutes.

NOTE: This can be made parve by omitting the cheese and seasoning with salt and pepper to taste.



Easy Lasagna
I wanted something very quick so I cut out steps from the regular recipies of this dish - this can be assembed in 10 mins.
2 tins of crushed tomatoes with onion (or garlic)
15 lasagna sheets - quick cooking
4 containers of low fat cream cheese
100 gms of cheddar cheese, grated
1 large egg
Preparation:
Heat the tomatoes in a saucepan or microwave. Mix up in a separate bowl the cheese and egg.
To assemble:
In a 9cm by 13 cm dish, put in one third of the tomato sauce. Put a layer of lasagna. Then spread one half of the cottage cheese. Repeat this stage again. Add the remainder of the tomato sauce, and cover with the grated cheese.

Cook for 40 mins in a medium oven.
Low fat and delicious.

KOSHER, GROUND TURKEY MEAT LOAF

1 1/2 lb. ground Kosher turkey
1 egg
1 c. seasoned parve bread crumbs or Kosher oat bran
1/2 c. soda water or Kosher tomato juice
Black or white pepper to taste
Parsley, chopped
1-2 onions, grated or chopped
1 green pepper, diced
Low salt Kosher soy sauce

Soak bread crumbs in soda water or tomato juice for half an hour. Mix in eggs, turkey and the rest of the ingredients. Cook a small sample in the microwave to test seasoning and texture, you may decide it needs more "zip". In a conventional oven, bake at 325 degrees for about 1 1/2 hours
