Pakoras:

This is a great recipe, adding a little hot oil to the batter and dipping the veggies in milk adds alot of flavor & crunch!

Ingredients:

1 cup besan (gram or chickpea flour)
2 tbsp rice flour
1 tsp salt, to taste
1 tsp turmeric
1 tsp red chilli powder
1/2 tsp cumin powder
1/2 cup milk
oil for deep frying

For pakoras: choose a selection of your favourite vegetables such as cauliflower florets , bell peppers, onions, spinach or even paneer, peanuts, cashews, green apple slices

Directions:

Mix chickpea flour with enough water to form a paste of medium consistency . Add all dry ingredients to the paste and stir well. Let rest 10 minutes.

Heat oil over medium-high heat . Add a few drops of the hot oil into the batter and mix well.

Soak vegetables in milk for a few minutes and then dip vegetables in batter to coat. Shake off any excess batter and carefully drop in batches into the hot oil .

Reduce the heat to medium and fry until the pakoras are golden brown on all sides. Remove & drain on paper towels.

Serve immediately with mint, tomato & tamarind chutneys .

1 tsp corriander seed
1/4 tsp baking soda
1/2tsp chilli pwdr
1/2 cup or less cilantro
1/4 cup mint fresh or dried
salt
mix with some water and add either Onion slices and fry or dip insome slices of spinash leaves or zucchini slices too are yumm and make sure your iol is hot ..and enjoy with some chutney and tamarind sauce.

PAKORA

1 onion
1 1/2 cups yellow lentils
1 1/2 cups water
1 egg
2-3 green chilli (optional)

Pour some lentils into a bowl of water and soak for an hour. After, cut the onions into thin slices and place in a clean bowl. after you do that
Next, drain the water from the lentils, and add to the onions. Pour in 3/4 cup of water and stir; then add the egg.

If you want to add chilli, cut the chilli into tiny pieces.

When you need them, pour a spoonful of the mixture into the frying pan.
