Chop suey is a mixture of vegetables. The vegetables could include cabbage, bean sprout, bamboo shoots and carrots. It taste like vegetables stir fry in oil or butter. It can be gooey and oily.

it's a bunch of chinese veggies in a brown sauce with meat or poultry. it is very good. it mostly has bean sprouts, water chestnuts, celery, bok choy, bamboo shoots, and sliced carrots in it. you eat it with rice. if you eat it with crispy fried noodles, then it's called chow mein.

"Chop suey" (literally: mixed pieces) is made-in-America for Americans (Rogers & Hammerstein "Flower Drum Song"). Traditionally, it's whatever's leftover from last night's meal (Chinese have a habit of keeping unfinished cooked food) to fry together with fresh veggies.)

In American-Chinese restaurants, the dish would normally consist of meats (often chicken, beef, shrimp or pork), cooked quickly with vegetables, soy sauce etc. Generally, tastes 'acceptably salty, lil sweetish' without a distinctive flavor/taste of its own - ok as a light snack/sidedish but not as a meal. For that "leftover bits" will not do.
