Easy Pad Thai

This Easy Pad Thai noodle dish can be on the table in about 30 minutes, and our version is much healthier than takeout.

INGREDIENTS

1 box(es) (8-ounce) pad thai rice noodles , (1/8-inch wide)
3 tablespoon(s) peanut oil
8 ounce(s) chicken breast tenders, cut crosswires into small strips
1/2 pound(s) medium shrimp, peeled and deveined
2 teaspoon(s) (minced) garlic
1/2 cup(s) bottled pad thai sauce or thai marinade sauce
1 teaspoon(s) soy sauce
3 large eggs, lightly beaten
2 cup(s) fresh bean sprouts
5 scallions, diagonally sliced
1/4 cup(s) fresh cilantro leaves
1/4 cup(s) salted roasted peanuts, coarsely chopped
Lime wedges

DIRECTIONS

1. In a large bowl, cover noodles with boiling water. Let stand 15 minutes to soften noodles; drain. Rinse under cold water; drain. Return noodles to bowl; toss with 1 tablespoon of the peanut oil to coat.
2. In large nonstick wok or deep skillet over high heat, heat remaining oil until hot enough for drop of water to sizzle. Add chicken, shrimp, and garlic, stir-fry 2 minutes until almost cooked through. Add noodles, pad thai sauce, and soy sauce; stir-fry, lifting mixture with tongs, until well combined and heated through about 2 minutes.
3. Push noodle mixture to one side of wok. Pour in beaten eggs and cook, without stirring, 2 minutes. Add 1 cup of bean sprouts, and the scallions. Continue to toss and stir-fry, combining eggs and noodle mixture until eggs are fully cooked. Serve sprouts, cilantro, and peanuts. Garnish with lime wedges.
