Greek grilled octopus....?!


Question: I had recently gone to a new Greek restaurant and ordered the grilled octopus (which I have had several times before and really enjoy). But this was actually slimy and black, sitting in a viscous liquid (like oil). Was it the squid ink causing the slimy-ness? I have never had it like that, is that the traditional way? Usually, it's just simply grilled and served with lemon wedges.

What they most likely served you was boiled octopus and not grilled or broiled that's why it was doused with the oil and vinegar. If it were truly grilled even if they were to put oil and lemon on it , it wouldn't get the slimy effect. It would be too dry for that to happen .In Greek cooking there are many ways of preparing octopus, you were just served the wrong thing. Ive made it in many ways and grilled was on of many. When I make it grilled I like to pour olive oil and lemon and it has never gotten slimy! The octopus shouldn't of had any ink cause if it were cleaned the correct way you get rid of all of that before you cook it....

It should not be slimey or black, I am a former chef and have worked with both octopus ans squid, octopus is cleaned and has no ink sack in them, some squid that have not been cleaned still have the ink sack in them.

If it was black it was not good, or it was sauced with oil and balsamic vinegar, it should be purplish and when grilled have a slight sweetness to it, I would boil it with a piece of white turnip, then let it cool, then marinate it in garlic, oil and fresh oregano, then grill it to order.

You are correct it is most traditionally served with lemon wedges, and some might have tzatziki with it.
