Is there such a thing as pickled potatoes?!
Answers: I've been making sauerkraut for years, and recently I've made the Korean dish, kimchi successfully. If I understand the chemistry correctly, lactofermentation converts some of the carbohydrates in vegetables into lactic acid, which pickles them. In other words, it produces an acid environment which prevents other bacteria from spoiling the food. I've never heard of making pickles by lactofermentation with potatoes. I've used about 20 other vegetables successfully, but this carbohydrate rich food isn't mentioned in any kimchi recipes. Can you use it in kimchi? If not, why not? And do any traditional cuisines pickle spuds?
In some parts of Mexico there are pickled potatoes, but the small kind, which get put into jars of vinegar with oil, pepper, laurel leaves, garlic cloves, salt, serrano or jalapeno peppers and slices of onion. They are used as appetizers and actually taste pretty good.
I had a can of store bought potatoes given to me before, they were edible but had that "can" taste. I imagine you could try it and see how it turns out.
