Chicken Wings In Five Spice

Yield: 24

Ingredients:

12 chicken wings -- whole
1 cup water-chestnut flour
4 cups peanut oil for deep-frying

MARINADE
1/2 teaspoon freshly grated ginger
1/8 cup light soy sauce
1/8 cup dry sherry or Chinese rice -- wine
1/2 teaspoon five-spice powder

Directions:

Cut each wing into 3 logical pieces. Save the tips for soup and use only the 2 meatier parts for this recipe. Prepare the marinade and marinate the wing pieces for 1/2 hour. Drain and toss in the water-chestnut flour. Deep-fry at 360F until golden brown, about 5 minutes.

You can make they baked or fried depending on if you like them really crisp.
Fried:
Soak wings in a little soy sauce with some crushed garlic and maybe some ginger. Then drain well and toss in a bag with something to coat ( pancake mix with some corn starch works well)
Fry in hot peanut oil until crisp. Drain on paper towels.
Mix with warmed sauce and serve. many good bottled sauces available or you can make your own. I mix a 1/2 cup of plum preserves with 2 teaspoons sesame oil and flaked sczeuan red pepper. Add slice green onion. microwave until hot and mix with wings.

Baked wings are less crisp but are lower in fat. I just soak the wings the same way, but shake a little sesame oil on them and bake at 400 for maybe 10 min on each side. ( or broil) Should be evenly browned. Then you can pour sauce over them and broil for a few minutes.
Other sauce ideas:
. soysauce, crushed pineapple, and cornstarch to thicken (stir often to avoid lumps)
. for heat add some Mongolian Fire oil.

Season them to your liking and then dredge them in a mixture of all purpose flour and corn starch and deep fry.

This is lots of work but Chinese stuffed Chicken wings are delicious, sometimes called angel wings. You may need instructions so go on the net and type in "recipe" after stuffed chicken wings.
But for Japanese Teriyaki Wings. The mix is usually 1 to 1. Depends how salty you want it or sweeet. 1 cup soy sauce, 1 cup water, and 1 cup sugar. Add fresh or powdered, garlic, ginger, and a dash of chili pepper. Marinate overnight or 2 days. Bake with some of the sauce at 350 degrees ( Don't let it dry or it will burn: Can barbecue while basting.
