Sancocho is a fairly rustic dish. Ingredients usually include chicken, fish, plantains, yuca, cilantro , yams, corn, and potatoes.
Sancocho made with chicken is called Sancocho de gallina. Sancocho de gallina is often made for special occasions or on weekends. Sancocho prepared with fish is called Sancocho de pescado.
A variant called Sancocho cruzado includes chicken, beef and pork.

It really depends. There is not a "national" dish or food for the whole country. Each region has its own traditional or "tipico" dish. Bandeja Paisa (red beans, rice, avocado, bacon, plantains) is typical of the northwest of Colombia. Sancocho (soup traditionally made with oxtail, plantains, yuca, potatoes, cilantro and other spices) is typical of the southwest part of Colombia. Fish and other seafood is typical of the coastal areas in Colombia, both on the Pacific Ocean and the Atlantic Ocean. Bogota (the capital) and its surrounding area has a especial dish called Ajiaco (it is a kind of chowder made with chicken, potatoes, corn and spices). In the Llanos (great plains in the east of the country) you would find the meat is the typical dish. Barbecues or "asados" and all manners of preparing the meat. This is where you find the huge ranches and our very own vaqueros (cowboys).
