What are the spices needed for a homemade indian curry?!
Answers: Fresh ginger and garlic, altho you can use the powder version but doesnt taste as good (personal pref)salt,turmeric,ground coriander,ground cumin,fresh chopped chillies,paprika(optional)and gharam masala. Indians very rarely use curry paste though.
Garam maslala is a basic mustard seeds, cumin seeds saffron, cayenne pepper, tumeric!
Try this its simple and not too much spices .
use a tomato sauce in a jar like for pasta , get barillo or a real italian one.
then just chop loads of corriander to throw in later but just add chilli powder and garlic powder. and a bit of cream to stir in later with the coriander its simple but great with chicken thighs skinned and boned.
These are the basic spices needed, for more specialized curries (vindaloo, jalfrezi, tikka, makhani, goan.....) more ingredients may be needed.
Basic curry spices:
tumeric (haldi)
ground cumin powder
ground coriander powder
red chili powder
garam masala (a mixture of various spices)
Garam masala also may contain cloves, star anise, nutmeg, cinnamon, bay leaf, mace, cardamom......but NEVER saffron (that's too precious to grind up with other spices!).

Basic spices that could make a good curry are:
cumin powder,corriander powder, red chilli powder, turmeric powder, few cloves, pepper corn and salt.
Others used in exotic curries are: bay leaves, nutmeg, cinnamon stick, cardamom, asafoetida....
