I buy Mouse Helper at Albertsons. Yummy except for the bones.

About a dozen to make a good tasty pie... But I never tasted a mouse.

Depends on the size of the mouse. You could feed them steroids, they would become twice as big, and you would only need half as many.
Haven't tried them personally, I like rabbits myself.
Skinning them should be easy I think, if not, try blanching them and use a potato peeler.
I would definitely use short crust pastry.

They take too long cuz you need at least a dozen. I'd go for two rats, will save you time.

You'd need fewer gerbils, so I'd reconsider.
