Anyone know what the 'salsa' like stuff is that they serve on some sushi?!

I can't think of anything traditionally Japanese that would meet this descrption, but these days Sushi is becoming increasingly fusion cuisine, especially incorporating flavors from other Asian cultures.

It might be a vietnamese chili and garlic sauce. There's a smooth one that is slighly sweet and looks like a thick catsup, and one that is thicker with visible ground chili's. It has become increasingly popular in all types of Asian restaurants and is even sold in grocery stores that have a decent ethnic section.

I think you mean Wasabi. It's a green plant they mash and you stir it in the soy souce to make it more spicy.

It's spicy mayo and it does have wasabi in it.
