Ok, nachos are not from mexico. A traditional party serves something called Birria made of goat wich is the original, but now they make Birria from a baby cow. They serve rice and beans everythign made from scratch. Also they serve carnitas,rice and beans. Mexico has 33 states and each state serves somethign different. Mole is something they serve in Puebla.

it depends on the region of mexico. most of what you'd be used to is actually tex-mex (nachos, quesadillas, tacos, gorditas, doubledecker burritos...), and isnt really mexican.

for interior mexican cuisine, some tasty, and easy to make dishes are cochinita pibil (spicy pulled pork), stuffed and roasted peppers, and queso flameado (my personal fave - it is melted monterrey jack cheese with roasted peppers, onions, mushrooms, and chorizo mixed in, rather than dipping with chips, you scoop it into corn tortillas). you can also make enchiladas. pork and seafood are more commonly used that beef and chicken, and be SURE to serve corn tortillas rather than flour tortillas. also, interior mexican uses alot of roasted peppers (chipotle, tomatillo, etc). also - avocados are favorites!
you can find recipes all over the internet (try google). if you are somewhere where you cant buy chorizo or corn tortillas, you can make those too but they arent easy. you can use any 'southwest' spice, but emeril's essence is pretty good!

I have a Mexican uncle, and he always makes a lovely enchilada, chili relleno, or tamale for celebrating. In summertime, it is barbacoa!

There are lots of "traditional" party foods in Mexico, as you can see by these answers.

Some of the most popular holiday and party foods are those that traditionally take a long time to prepare like pozole, mole poblano, and tamales. A hot drink called atole (like hot liquid pudding) is common on holidays. Many holidays and their parties also have a traditional bread associated with them--Pan de Muerto for day of the Dead, Rosca de Reyes for 3 Kings Day (Epiphany, Jan 6).
