Any good recipes for spring rolls/and the dipping sauce?!


Question: My mom makes these all the time; they're close to the authentic Vietnamese recipe:

You should boil some shrimp (the EZ peel kind are easiest to prepare) and grill/boil some pork. In our house we boil pork belly (what bacon comes from) but some non-Vietnamese people are freaked out by it. But you could leave out the meat entirely. Optional ingredients are a thin omelet, cut into strips, and sliced Chinese sausage. Most importantly, you need to boil some rice vermicelli; it's the main filler.

Of course, you need some rice wrappers and water to dip them in. Leave them alone so that guests can dip their own wrappers; once wrappers are wet they stick together and are obnoxious to pull apart. Also, don't cut them; big wrappers make for easier spring rolls-wrapping.

You need plenty of veggies for crunch, freshness, and that nice healthy feeling (lol). Slice cucumbers into medium-thin slices and set out washed leaves of lettuce (romaine or red lead work best). If possible, you should get sprigs of mint, peppermint, sweet thai basil, or vietnamese balm (you can get these at Asian supermarkets, or H-mart). Their spice and freshness of flavor cut the taste of the proteins and the peanuts sauce. It's interesting, and you should try it at least once in your life.

Traditionally, you would dip the rolls in a sweet fish sauce seasoned with lemon, chili, and garlic. If you can't get your hands on fish sauce or don't want to try it (although it is delicious) here is my aunt's easy peanut sauce recipe: Fry some chopped garlic until golden. Throw in about 2 big spoonfuls of peanut sauce. Add about a spoon of ground bean sauce. Squirt in about two spoons of ketchup. Add some soy sauce or chili if you wish. Then, pour in Coca-cola until you get the consistency you want.

Look, I know the Coca-Cola sounds weird, maybe even gross, but it really is good. We've had non-family members try it and they love it and ask for the recipe. It makes the sauce reduce into a sweet-savory sauce perfect for the light spring rolls.

Fresh Spring Rolls With Thai Dipping Sauce

INGREDIENTS
6 spring roll wrappers (available in Asian markets)
12 medium shrimp, cooked and shelled
1 cup shredded leaf lettuce
1/3 cup chopped cilantro
1/2 cup peeled, seeded, chopped cucumber
1 medium carrot, julienned
Quick Thai Dipping Sauce:
1 tablespoon light soy sauce
1 tablespoon white-wine vinegar or rice vinegar
3 tablespoons mirin
1/4 teaspoon grated ginger root (optional)

DIRECTIONS
In a bowl of cool water, soak a wrapper until limp. Lay wrapper out flat. Place 1/6 of each ingredient down middle of wrapper, starting with lettuce. Fold over each end and tightly roll the wrapper around the contents, as if making a burrito. Moisten at seam; press to close.

Lay on plate, cover with moist paper towel and refrigerate until ready to serve. Then slice in two and serve with Quick Thai Dipping Sauce, below, or peanut sauce.

To make the Quick Thai Dipping Sauce, combine all ingredients in a small bowl.

i don't know of any right off the top of my head but if you go to yahoo and type in recipes it will bring up every kind of recipe you can think of
