Why does coffee taste different when reheated in the microwave?!
Answers: it smells different, gets a strange white foam on top...why?
A Maillard reaction is responsible for the different taste!
The Maillard reaction is a chemical reaction between an amino acid and a reducing sugar, usually requiring heat. The sugar reacts when in the microwave and an interesting but poorly characterized odor and flavor molecules result.
High temperature and low moisture levels all promote the Maillard reaction
sugars react more! So to avoid the Maillard reaction from happening, keep the coffee in the Microwave for far lesser time than usual. Or you could use other means of heating.

anyway that you reheat coffee will make it taste different from the moment of its birth or brewing.(just answered a question about abortion) what are you reheating it in? it might be picking up something from the cup or from the microwave itself.
Coffee becomes stronger in the microwave because it condences as the water evaporates during the reheating (should it be heated to boiling point) or even to a very hot temperature.
Because you're cooking it! It shouldn't be cooked just dissolved in boiled water. Cooking bad for coffee!

Well one you're REheating it. A lot of things taste different and/or nasty when reheated [let alone in a microwave].
But I'd say the main reason with coffee is that it wasn't freshly boiled, it's not the heat that makes the coffee good, it's the freshness.
cause believe it or not coffee is actually an acidic like oranges or lemons. so if u put a lemon in the MIC it might not taste so good when u take it out.
that's why if u leave coffee in even for an hoUr in ur car it'll smell kinda like cat pee.

The oil separates from the coffee, that is the foam you are seeing on top. Oil is the enemy of coffee. Starbucks is very oily because it is over roasted, that is why they have to put so many flavorings in it to make it drinkable.
For the record "American" coffee (meaning I take it USA) is among the best in the world. There is only one place coffee is grown in the USA, Hawaii. Kona is the creme de creme of the Hawaiian coffees. Starbucks use little if any coffee from the USA, I know they say they use Kona, but Kona is a tiny growing district and no one knows what farm is selling to them.
