Why do you have to soak beans overnight before cooking?!

its not imperative to soak overnight...it cuts down on the cooking time. actually i dint soak my beans because they loose alto of minerals and vitamins in the soaking water. just cook them a little longer that's all.

If you don't soak them they may not turn out mushy. It will take a lot longer to cook them.

I like to soak the beans to cut down on the cooking time. But you could just cook them longer if you don't want to soak them.
