i think it depends on the season. we tend to forget to eat it all year round, though we should (since its available canned)! but, when its fall and the weather is cooling down, we go for pumpkin soups, pastas, pies (the obvious one, lol), etc...its extremely versatile, as are all gourds, has TONS of health benefits (just look at what the one person already said about its health benefits...its got those and then some, google it), and if you ask me, is quite tasty! i made a pasta dish w/ pumpkin a few weeks ago that wound up tasting a lot like a curry...very nice, and i got the added health benefits from the pumpkin =)

It is edible and has lot of vitamins, which are A,B,C ,calcium,protein. Not only on pies . There are soup,pumpkin ice cream, pumpkin pudding, pumking stews with beef shanks.
they don't really, just during thanksgiving and christmas. due to the harvest season.
I, personally don't care for pumpkin in any shape, form or fashion. But , those that do love it are consuming alot of vitamins and it is very very healthy. . . . .
thats a very close-minded question...pumpkin pie is yummy for thanksgiving... and maybe after halloween we eat pumpkin due to leftovers...but i dont think everyone eats alot of pumpkin...most people i know dont even like it!
My only guess is that it's traditional for the holiday season. Me, personally, I hate it and won't even touch one bite of it. I have a rant about how all the cooking magazines and food shows always have pumpkin this and pumpkin that. I can't get away from it until January. Then all the chocolate stuff starts, and I don't eat chocolate! *rant*
