Question: What's causeing the bacteria growing more in the ice cubes which is frozen where bacteria is dorment[frozen. Is the water left in the warmth next put in ice cube freezers? or What. They should blame [if blame be necassary] blameing or chooseing the ICE CUBE makers , the manufacturers. Or is the testings relliable, ?

I would say the reliability of the testing is suspect. It should be repeated.

If it is confirmed, it's likely that restaurants are never cleaning the water lines that feed the ice makers, and never cleaning the containers that hold the ice.

Actually, I believe it is more of a case of poor ice storage systems. The food being created on site emits microscopic particles of oil and food into the air, which then land on the ice and have a chance to fester and multiply in the extremely moist bacteria-lovin environment. In some cases, especially if they bake the bread on site- yeasts can grow as well. This is all possible through the ventilation systems of their drink machines.

what causes this problem in restaurants is the ice scoop. if it just thrown on the side of ice machine or on top then theres lots of bacteria that get on the scoop then its put back into the ice machine... as well when the door is open, servers/bussers sneeze and it goes right in.. as well bussers that fill water jugs scoop with the jugs and dont use the scoop and bacteria on the outside of the jug get on the ice.. . the entire machine should be emptied and cleaned once a month, but alot of places never clean the machine ever.. its just a fact of life.. there are other more pressing things for chefs to worry about..

I would say the testing is a bit off. It said she flushed the toilet then took her sample. That almost like taking the water straight out of the tap and testing it. The only Chance the water would have to collect bacteria is as it enter the toilet bowl.
