Chefs out there...I need your help.?!


Question: Alright, I really want a set of those circular cookie cutter molds...although they're not really cookie cutters. They're a lot deeper/taller than normal cookie cutters, and they're usually used to make molds of things like crabmeat, diced strawberries for desserts, wasabi slaw, you know. I bought a set of just circular cookie cutters, but they are not near deep enough to make an impressive presentation. I hope I'm being clear enough about this....I'm sure they have a very simple name but I can't seem to figure it out and I don't know where to find them. These are the rings that you would set on a plate, fill them completely with the item, then remove the ring and the food will maintain the shape of a tall cylinder. Chefs out there...help!

Try looking for a set of biscuit cutters. They come in varying sized diameters, and are much deeper than a cookie cutter (my mother had a set that was nearly 2" deep!).

Any restaurant supply store would have them.
Make your own from a tuna fish can, just open both sides. Can also use an 8 oz tomato sauce can.

I use tuna cans, with both ends cut out.

Go to your local hardware store and have them cut you some PVC pipe in the dimensions that you need. They will be happy to do it for you.
