Well...I want white sauce made thick with cut up hard boiled eggs mixed in poured on toast and asparagus on the side. Yum..best breakfast ever.

I think I'll have to wait for it though...I'm going to bed now...It's 3:30 in the morning..*yawn*.

1 scrambled and 1 sunny-sideup egg
stewed tomato
small 6oz OJ
16oz of cool H2O
small cup of home brewed esspresso on the way out of the door in my special mug.
grapes to snack on during my commute

Choice 1:

EGGS FLORENTINE

1 (10 oz.) pkg. frozen chopped spinach, cooked & drained
1 (11 oz.) can condensed Cheddar cheese soup
4 eggs
1 tbsp. milk
2 tsp. minced dry onion
1 tsp. mustard
1/2 c. croutons

Combine spinach and 1/2 of the soup. Spoon into individual casseroles. Spread evenly on bottom and up sides. Break 1 egg into each casserole. Bake in 350 degree oven 20-25 minutes or until eggs are set. In pan heat and stir remaining soup, milk, onion and mustard. Spoon over eggs. Garnish with croutons.

or alternatively....

Choice 2:

EGGS BENEDICT

8 slices Canadian bacon - saute until heated through
8 poached eggs
4 English muffins (halved, toasted)

HOLLANDAISE SAUCE:

3 egg yolks
1 tbsp. lemon juice
1 tbsp. cold water
3/4 c. butter (1 1/2 sticks)
Salt and pepper (white pepper)

Combine egg yolks, lemon juice, salt, pepper and water in blender. Blend 10 seconds at high. Melt butter. As blender is running, add hot butter in a steady stream until mixture thickens (20 seconds). Serve immediately.

Layer English muffin with bacon, poached egg. Top with Hollandaise Sauce.
