It's yummy.. but not necessarily the best thing for you..
I wonder if you had the real thing or the more common ersatz version. They are both basically partially caramelized liquid sugar. Real maple syrup must cost a fortune in Australia; it's no bargain even in the U.S. where it is made, about $15 a liter. With the Canadian dollar at parity with the U.S., the price will probably be even higher soon, since so much maple is produced in Canada.
The real thing can only be made in the early spring, when 40 l of maple sap must be collected, filtered and boiled to create 1 l of syrup. Imposter maple syrup is made from corn/sugar syrup + thickeners, preservatives and flavorings. The major flavoring for "artificial" maple syrup is natural though--it's the spice known as fenugreek.
