I'd definitely go with broiled...I use a good sprinkling of lemon and black pepper on both sides. Mmmm...can I come to dinner?
Broiling is your best way to get crisp on the outside and well-done, medium, or rare on the inside!

bake or broil them is best, less transfats than pan fried.

I like them seared in a hot fry pan.

Season with salt and pepper. Heat up your pan add a little bit of olive oil (no trans fat), wait half a minute or so for the oil to get hot, put the fish in the pan. It will take a minute or two for them just to brown up - if you have high-quality tuna, you didn't need to overcook it - turn over and brown the other side.

Let them set for a couple of minutes before serving for the temperature to even out. Then serve with some slices of citrus or something with a bit of "tang". Yummy!

I like broiling.

Ideally, I would grill the steaks (I recently bought a non-stick, stove-top griddle/griller combo gadget that is great!It just sits across two of my burners, I control the heat by adjusting the height of the flames). I imagine you could adapt the recipe for use under a broiler, or you could pan sear the steaks in a very hot skillet. I like to let the steaks come to room temperature before cooking. Depending on size (6 or 7 oz. pieces) I will remove them from the refrig about 15 to 20 minutes before I'm ready to cook. I brush both sides of each steak with extra virgin olive oil then lightly season both sides with freshly cracked black pepper, sea salt or kosher salt and for my tastebuds- I rub one side only with roasted garlic paste that I make by roasting halves of a whole garlic 'head' in my oven, then squeezing the nearly caramelized flesh into about 2tbls. olive oil in a mortar and use a pestle to combine the ingredients into a paste-consistency. (Add more olive oil as desired) When the grill/skillet/or broiler is hot and ready, toss on your tuna and give it 1 minute per side for a rare delight. Make certain your cooking device is properly pre-heated to avoid over cooking the tuna. Ciao' Peace.
