buy british from your local butcher who can answer any questions on tracability on products ,how long to cook for and most importantly storage of all uncooked meat.The garage or the porch is not good enough,raw meat should be kept in a fridge with a temp of below 4 degrees,invest in a small fridge thermometer and remember a butcher is not just for christmas
but all year round.

so long as its properly cooked shouldnt be an issue. Bird flu and all the other nastys carnt survive in a hot oven.

As long as it's cooked properly. The majority of problems with poultry are because they haven't been cooked properly. For best results, fully thaw your bird before cooking.

I don't think there are any safety issues if it is cooked properly. I think the biggest issue is quality. Buy the best you can afford and not under any circumstances those that have been force reared in an artificially lit tin shed. The rule is that if it is cheap then it is probably one of the latter. If you can go for free range British birds. They will be at least double the supermarket price but the taste and texture is well worth it.
