Answers: I am a former chef and had a number of different ones, I was in San Diego CA in the US, it is similar to the regular type with meat or veg, but they use cabbage and a different sauce and the fish can either be grilled in not coated or some were bread or battered. And they offer hard or soft types as options.

To tell you the truth, there is such thing as a fish taco, but it is disguisting and that is why no restraunt will serve it.
