What is bologna made out of?!


Question: I'm from Pennsylvania Dutch country so I can tell you that we make bologna out of pork, beef and venison (deer meat), and spices. It is often smoked.

Personally I've never seen some of the other stuff people here mention but maybe it's a local thing.

OK - after they take all the parts of the pig that can be sold as chops, steaks, roasts, ect. they take what's left and grind it up - then it becomes bologna

I've heard it's gross but then what about BEEF bologna?? Is that better?

I am a former chef and "Lily S" is right the rest have a few screw's loose, Most is made with pork and or beef spices, and is emulisifed by grinding it smooth, then steam smoked for 6 hours.

I like the all beef variety and would like to try one made with venison, if you ever can find it a european deli and the Austrian or German style, a bit less spice and more smoke.

As for the other comments about foreign meats and parts, they just show there intellegence when making comments like that, as for horsemeat, I think that fellow has a problem??
