It should have a yellow color to it. Press gently on it. It should be firm and only yield slightly. Smell it. It should smell sweet (ripe). If it has no smell, it isn't ripe yet.

As for cutting too soon. I don't think it will ever ripen if you do.

Pineapples will not ripen after picking. You must buy one that's already ripe, without starting to spoil.

Strawberries won't ripen after picking, either.

When you cut it too soon you'll have a sour pineapple.
It's ripe when it smells like a pineapple on the bottom and is a little soft and the top will pull off more easily when it's ripe!
