Olives can be pressed more than once to get more oil out. Extra virgin oil is also called first cold pressing oil, because it is the oil that comes out the first time the olives are pressed. In later pressings, the olives can be heated to work out more oil. The EV oil is generally lighter and more pleasant tasting than the stuff that comes out under greater pressure. They all have different flavor properties. One is not better than the others..just for certain uses.
virgin means that the olives are crushed at room temperature (cold pressed). regular, light and extra light all come from chemical extraction at high temperatures, and those types aren't considered as good. So that's why they started using the term "virgin" as a way to inform the consumer of its quality.
extra virgin means that the oil came from the very first crushing of the olives. They only smashed or rolled over the olives one time. A lot of wine makers do this too. They only use the juice from the very first crushing of grapes for their most special bottles.
