Leg of lamb, boned and lay flat. finely shred a large onion and mix with a clove or two of garlic and place on the lamb. place a layer of sage and onion stuffing next, salt and pepper. Roll the meat as best as you can and secure with string. cook on a low heat for a couple of hours until cooked. serve with mint sauce, onion sauce, roast potatoes, carrots, leeks and broccoli make up a thick gravy using the meat juices.
